In keeping the parma tour moving forward not backward, upward not forward and always twirling, twirling, twirling towards freedom I found myself in the mean streets of Pyrmont. I have driven past this hotel many times and it didn’t really register on my Parma list until I was in the area. When you walk in the set-up is a pretty standard city pub with the usual beers on tap. Off to the side is a renovated bistro and that as they say is where the magic happens. I was a bit dubious at first as everyone that works there seemed to be Russian but man can those sneaky Russians deliver a great Parma! And for $17.00 as well. While the size wasn’t as massive as some I have had in recent times it was cooked perfectly, a nice crispy cheese, herb and tomato sauce topping. The salad was in its own bowl and consisted of lettuce, tomato, onion & carrot. The chips were pretty good but could have been cooked a bit longer. +1 Bonus point for aioli, lemon and the waiter coming over and serving cracked pepper which took this pub meal into fine dining territory.
